easy and super yummy cinnamon rolls


So these are the best cinnamon rolls that I have ever made and probably also the best homemade cinnamon rolls I've ever had.  Now, there's Cinnabon, to which nothing compares, but these are so good that I'd probably be just fine having one of these instead.  They're really easy and not time consuming at all.  You can make these, start to finish, in less than 45 minutes thanks to this awesome dough recipe.  These rolls are not topped with an icing, but a frosting, a cinnamon cream cheese frosting at that and it's amazing.  The cream cheese keeps these rolls from being too sweet, but it does make them richer, not that there's anything wrong with that.




I mean, look at that thick, creamy, delicious frosting.  Now that's the stuff dreamy cinnamon rolls are made of!  And yeah, we all know that my food photography is sub par, but my cooking is not, so please, don't just take my word for it.  Make these cinnamon rolls!


Dough Recipe (from here, check it out for the easiest and really yummy garlic Parmesan breadtwists!)
1½ cups warm water
2 Tbsp. sugar
1 Tbsp. yeast
3½ cups flour
1 tsp salt

Preheat oven to 400 and lightly spray a 9x13 pan with cooking spray.  In a large mixing bowl, combine water, sugar and yeast, and let sit for about five minutes, until the yeast is foamy and thick.  Add the flour and salt, and mix well; the dough should be really moist and sticky, this is what makes it so chewy and delicious after it's baked.  Let rise for 10 minutes.

Filling Recipe 
1 stick salted butter, melted
2 tbsp. cinnamon
3/4 cup packed brown sugar

Combine filling ingredients.  Roll out dough on floured surface into a long rectangle, about 1/2 inch thick.  Spread filling to edges and roll up the dough.  Cut into twelve pieces.  Place into prepared pan.  Bake for 15-20 minutes, or until golden brown.  Remove from oven and let cool five minutes.

Cinnamon Cream Cheese Frosting Recipe (from here)

1/2 stick of salted butter, softened
4 oz cream cheese, softened
1/2 tsp. cinnamon
1 tsp. vanilla
1/2 lb. (about 2-2 1/2 cups) powdered sugar

I know the original recipe says unsalted butter, but I like using salted in very sweet recipes to help cut it back a little bit.  Combine all ingredients, except sugar, and mix well with a hand or stand mixer until smooth.  Slowly add the sugar until you reach a thick and creamy consistency.  Spread over your cinnamon rolls.  Serve warm and enjoy!
